Miranda Hudson is a creative director and brand strategist by day and restauranteur by night. In late October she and two friends are opening the much anticipated Cascadian-focused Juniper in Vancouver, Canada's Chinatown neighborhood. She's a passionate wanderer, maker and lover of all things handmade and delicious so naturally we asked her to mix up a 5 O'CLOCK FRIDAY cocktail. Drawing color inspiration from peonies she saw at the Parisian market earlier this summer, her cocktail is fresh and floral. Enjoy!

Honey Gin Fizz

1.5 oz gin (A floral gin works best, try Aviation from Portland or Hendricks)
0.5 oz honey syrup (3 parts hot water to 1 part honey)
1 oz fresh lemon juice 
1 oz sparking wine (try a sparkling pink rosé)
2 dashes lavender bitters 
1. Shake the gin, honey syrup, lemon juice and lavender bitters in a cocktail shaker
2. Strain into a rocks glass over an oversized cube of ice
3. Top with sparkling wine
4. Garnish with fresh lavender and enjoy
